Its saturated ruby/purple colour is followed by sumptuous aromas of cedarwood, creme de cassis, wood smoke, coffee, and dried herbs. The wine is forward, lush, and full-bodied. It is already complex as well as succulent, fleshy, and long. Tannin in the finish suggests more nuances will emerge in 4-5 years. It is a complex, classic Mouton. Anticipated maturity: 2005-2030"
Château Mouton Rothschild spans 90 hectares (222 acres) of vines to the north-west of Bordeaux, on the edge of the Médoc peninsula, itself situated, as its name indicates, in medio aquae, amid the waters: those of the Gironde estuary to the east and of the Atlantic Ocean to the west. The Médoc vineyard, which dates back to Roman times, now covers around 16,500 hectares (41,000 acres). The vines are planted on a narrow strip of land 80 km long and 5 to 10 km wide, close to the river, which irrigates the soil in-depth and moderates differences in temperature. Bordering the northern limit of the Landes forest, the Médoc benefits from the mildness of the ocean climate while also being protected from its excesses.

Climatic conditions
Flowering began on 25 May and took place evenly and quickly across the three varieties; it was complete by the beginning of June, some eight days earlier than the average for the last 30 years. The spring and summer of 1999 were relatively hot, with temperatures consistently higher than the seasonal average.

Mid-veraison was noted three to six days earlier than average, on 4 August for Merlot and 7 August for Cabernet Sauvignon. Temperature records at the end of August showed an increase of more than 1° C in comparison with the aggregate average for the last 30 years. Beneficial for the fruit, these conditions also encouraged constant growth of the vines, which were trimmed eight times rather than the customary five or six.

July and August were wetter than normal: 169 mm of rain fell during the two months, compared with an average of 107 mm. The rainfall, mainly due to storms on 27 July and 2, 6 and 18 August, did not have the same effect as steady rain, since the water ran off relatively quickly. Fine weather returned on 20 August, enabling the crop to ripen in good conditions. The grapes were of good quality, with high degrees of potential alcohol and a perfect balance between sugar and acidity. Anthocyanin levels were high or very high, especially in some Merlot parcels, holding out the promise of a great vintage.

Crop thinning and leaf removal were carried out in the entire vineyard. Fine, very sunny days alternated with dull weather during the harvest period, making it possible to harvest a healthy crop of well-coloured and nicely tannic grapes.

Tasting Notes:
The wine has an evolved colour with a slightly orange, brickish tint at the rim and a deep and complex nose that offers an array of stewed fruit, black fruit, tobacco, spice (clove) and peppery aromas.

Cab.Sauvignon Blend
Cabernet Sauvignon lends itself particularly well in blends with Merlot. This is actually the archetypal Bordeaux blend, though in different proportions in the sub-regions and sometimes topped up with Cabernet Franc, Malbec, and Petit Verdot.

In the Médoc and Graves the percentage of Cabernet Sauvignon in the blend can range from 95% to as low as 40%. It is particularly suited to the dry, warm, free- draining, gravel-rich soils and is responsible for the redolent cassis characteristics as well as the depth of colour, tannic structure and pronounced acidity of Médoc wines. However 100% Cabernet Sauvignon wines can be slightly hollow-tasting in the middle palate and Merlot with its generous, fleshy fruit flavours acts as a perfect foil by filling in this cavity.

In St-Emilion and Pomerol, the blends are Merlot dominated as Cabernet Sauvignon can struggle to ripen there - when it is included, it adds structure and body to the wine. Sassicaia is the most famous Bordeaux blend in Italy and has spawned many imitations, whereby the blend is now firmly established in the New World and particularly in California and Australia.
