It is hard to go wrong with chicken and turkey, roast dinners and cheeses.The Rully 1er Cru blanc "Cloux" is located under the two other 1er Crus "Raclot" and "Rabourcé" of the Villaine estate. It is grown on a steep slope whose inclination makes it one of the most beautiful climates in the Rully Appellation.

Wine Tasting: 
A beautiful bright yellow and green colour, fresh and intense on the nose with mineral and floral notes. The palate is slightly bitter hint ensuring a fresh, elegant and joyful finish. Almost expresses the profile of certain Chassagne-Montrachet wines.

Domaine de Villaine
The winery of the de Villaine family, co-owners of the legendary Domaine de la Rommanée-Conti, is considered the highly regarded jewel of the Cote Chalonnaise. With great devotion, they dedicate themselves in particular to the cultivation of the Aligoté as the unfortunately often misunderstood and sidelined great classic among the grape varieties of Burgundy. De Villaines` decades of work around the Aligoté made a significant contribution to the fact that Bouzeron, the only municipal appellation for this grape variety in Burgundy, was created in 1997. Like the Domaine de la Romanée-Conti, the Domaine de Villaine, which is run by Aubert de Villaine`s nephew Pierre de Benoist, also uses biodynamic farming.

The Grape
Chardonnay
Chardonnay is the "Big Daddy" of white wine grapes and one of the most widely planted in the world. It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or.

Burgundy is Chardonnay`s spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvelous poise, elegance and balance. They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.

It is quantitatively important in California and Australia, is widely planted in Chile and South Africa, and is the second most widely planted grape in New Zealand. In warm climates Chardonnay has a tendency to develop very high sugar levels during the final stages of ripening and this can occur at the expense of acidity. Late picking is a common problem and can result in blowsy and flabby wines that lack structure and definition.

Recently in the New World, we have seen a move towards more elegant, better- balanced and less oak-driven Chardonnays, and this is to be welcomed.
