The Saint Aubin Les Combes 1er Cru comes from the parcel of the same name located between Puligny Montrachet and Chassagne Montrachet and from one of the best quality-price wines in the area.

As the name itself says, the vineyard is located at a lower height, with a fresh exposure facing east that presents a clayey surface soil on a limestone substrate.

Vinification: Manual harvest, pressing of whole bunches, cold stabilization and fermentation.

Ageing: for at least 12 months in tonneaux for 85% of 2nd and 3rd passage and 15% new. Subsequent 6 months in steel before bottling.

Tasting Notes: The result is a wine with intense minerality and marked acidity, balanced by an elegant flavour.

Food Pairing: Pasta, Rich fish (salmon, tuna etc), Shellfish, Mild and soft cheese and Cured Meat

The Domaine Fabien Coche, a family business created in 1940, owns 12 hectares of vineyards with an average age of about 40 years distributed in the best appellations of Mersault, Pommard, Auxey-Duresses, Monthélie, St. Romain, St. Aubin and Puligny Montrachet.
The processing methods are respectful of the territory and the wines, with no herbicides or chemicals. The ambition of Alain Coche-Bizouard and his son Fabien is to produce excellent wines that know how to last over time, which immediately seduce with their great balance without heaviness, fresh and fruity with a marked acidity that makes them hard in the first years.

The Grape
Chardonnay
Chardonnay is the "Big Daddy" of white wine grapes and one of the most widely planted in the world. It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or.

Burgundy is Chardonnay`s spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvelous poise, elegance and balance. They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.

It is quantitatively important in California and Australia, is widely planted in Chile and South Africa, and is the second most widely planted grape in New Zealand. In warm climates Chardonnay has a tendency to develop very high sugar levels during the final stages of ripening and this can occur at the expense of acidity. Late picking is a common problem and can result in blowsy and flabby wines that lack structure and definition.

Recently in the New World, we have seen a move towards more elegant, better- balanced and less oak-driven Chardonnays, and this is to be welcomed.
